Boston Market Research Indicates Non-Traditional Dishes Will Round Out Thanksgiving Menus This YearGolden, CO  (Restaurant News Release)  While turkey remains the most popular Thanksgiving entrée, served as a main course in 89 percent of all households, a new survey from Boston Market found that a few surprising dishes will round out menus this year. Specifically, lasagna will be served as a main course in 12 percent of households, while 10 percent will also serve a vegetarian entrée.

Boston Market makes every day Thanksgiving, and this year, the home style food chain anticipates that it will serve more than 1 million customers on Thanksgiving Day alone. In fact, all 460 of its locations will be open on Thanksgiving Day providing guests with home style Thanksgiving meals and solutions for all of their holiday food needs.

“The Thanksgiving meal is so much more than just food – it’s about creating memories, and it’s not something to take a risk on,” said George Michel, CEO of Boston Market (a.k.a. “The Big Chicken”). “At Boston Market, these holiday foods are our everyday staples, so you can trust us to make the food that everyone loves. Our goal is to make sure our guests’ holiday meals go smoothly and we look forward to serving many customers on November 28 and beyond.”

The holiday season is the busiest time of the year at Boston Market. Last year alone, the home style chain served more than 3 million pounds of mashed potatoes and more than 122 million mini cornbread loaves in November and December.

Additional research from Boston Market indicates that beyond turkey, stuffing is the MUST HAVE item for a Thanksgiving meal. In total, 33 percent rate stuffing as their desired food choice after turkey. The survey also found that people anticipate spending nearly $30 less on Thanksgiving dinner in 2013 – $133.07 – than what they actually spent in 2012 – $160.40 – for an average of 10 guests.

Boston Market is offering guests a variety of holiday meal options this season, including:

  • Oven to Table Holiday Meals: Whether it’s meals for four or 12, turkey or ham, Boston Market handles all the cooking and seasoning. All hosts need is two hours to heat and serve.   • Hot & Ready Catered Buffets: Whether you need a holiday meal for the family or the office, Boston Market will take care of every detail, and even deliver the feast.
  • A la Carte: Whether you burned the green bean casserole, need to pick up a pumpkin pie on the way to grandma’s house or are simply pressed for time in the kitchen, Boston Market has all the sides and desserts you need for a worry-free holiday.
  • Thanksgiving Day Meal: For those planning to dine out or need last-minute side items, all Boston Market restaurants will be open on Thanksgiving Day (hours vary by location) and offer holiday favorites like the Thanksgiving Day Meal, which features roasted turkey breast with two home style sides, freshly baked cornbread and a slice of apple or pumpkin pie for $10.99.

On location in Hialeah, Florida, Boston Market’s Chief Brand Officer, Sara Bittorf, discusses how the brand’s 35 consecutive months of positive sales and the implementation of an elevated guest experience have led to this exciting point in the brand’s history. The Hialeah location is hosting a grand opening event on Friday, October 11 to celebrate its arrival in the South Florida market.

What changes have been made to the restaurant that the guest will notice?

“The first thing guests will notice when they come to this location is the décor package. It’s been contemporized with fresh cues all over the restaurant to demonstrate our position on fresh ingredients and high quality. They’ll be able to see our signature fresh, never frozen chicken being cooked in our rotisserie ovens all day long. They’ll notice a brand new service line, which is intended to help the customer get served a little more quickly with more customization.”

How did you log such an impressive series of positive store sales?

“We’ve had 35 months of positive comp store sales, of which we’re very proud. It started as a result of the enhanced experience that we introduced in 2010, and I think it’s been reinforced by the execution at the restaurant level. Our employees have played a major role in this turnaround, and the positive momentum continues to build on itself. When the excitement goes up, the service is better, and when the service is better, the customers respond. We have a lot of innovation in the future that we’re getting ready to introduce.”

How do you plan to reinvent the Boston Market brand?

“We have a great brand that was built on this idea of not just putting dinner on the table, but making a mom or a dad feel good about that meal and providing a great family experience. We want to bring the brand back to its former glory and bring that emotional connection back to our customers. The second task is getting the word out that Boston Market is back. We’re back and we’re back in a big way. We’re back with new products; we’re back with an enhanced experience. We’re open for business and we’re inviting people in to our restaurants.”

You haven’t opened a restaurant for the last 7 years. Why now? Why South Florida?

“Boston Market is opening our first new restaurant in seven years now because we’re positioned for growth. We’ve had almost three years of positive comp sales; we’re financially healthy again and we are ready to start building restaurants that drive people in to experience a great Boston Market meal. South Florida’s always been a great market for Boston Market. The people here love our product, and the business that we do here is very strong. We feel like we have a lot to learn from this market and a lot of business to do.”

What does the future look like for Boston Market?

“This is the first of many planned development opportunities for us, and we’re looking at various scenarios. We want to be where people are and where they can enjoy a great Boston Market experience, like airports, universities, neighborhood malls. All of those are on the table.”

The newest restaurant is located at 1001 W. 49th Street in Hialeah, Florida. The grand opening celebration is on Friday, October 11 at 10:30 a.m. There will be entertainment, games, and prizes, along with an appearance by Boston Market’s CEO, George Michel.

Additionally, total customer transactions are up 8 percent versus this time last year. These increases come at a time when many in the fast casual industry have cited a slowdown in their business. As a result of the demand, Boston Market is adding ribs to its menu permanently in all locations.

“Demand for St. Louis Style ribs at our restaurants has exceeded our greatest expectations,” said George Michel (a.k.a. “The Big Chicken”), CEO of Boston Market. “I’ve worked in the restaurant industry for over 40 years and I’ve never seen a new product make such a sweeping impact. We ran through inventory for the entire eight-week promotion in about three weeks.”

Since the ribs launch, customers, on average, are spending $12 for an order of ribs at Boston Market compared to less than $10 for chicken, turkey or meatloaf. St. Louis Style ribs at Boston Market – available as individual meals with two sides and homemade cornbread – are priced between $10.99 and $12.99, and half of all ribs meals are being purchased as a combo with rotisserie chicken for $12.99. The ribs also are available a la carte, in family meals, and through catering.

“While other category competitors are advertising value menus with low price points, we focused on innovation, a great guest experience and product quality to allow us to offer a more premium product,” said Michel. “Clearly, this strategy is paying off. Diners at Boston Market know that they may choose from an array of delicious menu items, all priced affordably, and all made with the highest quality.”

The launch of St. Louis Style ribs continues the strong turnaround at Boston Market. The company has posted 34 consecutive months of positive comp sales. Additionally, the company is preparing to open its first new restaurants in six years.

Since joining Boston Market nearly one year ago, Bittorf has been singularly focused on developing consumer campaigns and new products to help connect the brand to key audiences. The decision to go undercover allowed her to change her focus from media and consumers to the employees and systems those same consumers experienced every day.

“This experience is one that has already been instrumental in our plans to grow and improve the quality of our restaurants,” said Bittorf. “We plan to leverage every single takeaway from my time on ‘Undercover Boss’ at every level of our organization.”

Jobs that she participated in during the show include cashier, drive-thru attendant and carver. Since the show was taped, the executive team at Boston Market has created an Innovation Fund to solicit employee ideas and a program to retrain staff on proper utilization of an existing system to ensure employee breaks are taken, even during busy times. Bittorf, who is left-handed, is also committed to exploring ways of making processes more “lefty-friendly,” since they are currently designed for right-handed people.

Golden, CO  (Restaurant News Release)  As part of an overall initiative to provide healthier options for guests, Boston Market today announced that salt shakers have been removed from tables inside all 476 locations. Boston Market also announced a commitment to reduce sodium levels in signature items by 20 percent and to reduce sodium in the company’s menu items by 15 percent by the end of 2014.

In the dining room, guests can still add salt to their food, but they will now need to leave the table to find a shaker, a change aimed at encouraging diners to taste their food before reaching for the salt. Salt shakers will now be available at a central condiment station. In the kitchen, Boston Market will work with research and quality assurance teams to find ways to reduce sodium in the restaurant’s signature rotisserie chicken, mashed potatoes and mac and cheese by 20 percent over the next six months, without sacrificing flavor. On average, Boston Market sells 48 million servings of its signature rotisserie chicken, 24 million servings of its mashed potatoes, and 21.6 million servings of its macaroni and cheese each year.

The effort to address sodium at Boston Market is the latest step in a series of menu modifications that began nearly two years ago. In October 2010, the company began a rollout of several enhancements, including reducing sodium in Boston Market’s signature rotisserie chicken by 20 percent and dropping sodium in the restaurant’s poultry gravy by 50 percent. Since 2011, the chain has also offered guests lighter options on a menu of Meals Under 550 Calories, which offers more than 100 combinations of protein-packed entrees and fresh vegetables. Boston Market Research & Development teams are continually focused on improving the company’s current food options while considering future product innovations and nutrient fortifications.

“As a consumer myself, I too have seen the headlines about the impact sodium can have on our health,” said George Michel, CEO, Boston Market. “By removing salt shakers from Boston Market tables, we hope to raise awareness of salt intake, without completely eliminating the option, to those who dine in our restaurants. Today, we are publicly committing to further reduce sodium from menu items while still delivering the great taste for which Boston Market is known.”

Today’s announcements also underscore Boston Market’s commitment as the first restaurant company to become a national strategic partner with the USDA’s MyPlate program, an initiative designed to help consumers make better food choices by illustrating the five food groups in a familiar visual, a place setting. At ChooseMyPlate.gov, consumers can find practical information and tips to build healthier diets, including balancing calories, which foods to avoid, and which foods to increase. As a national strategic partner, Boston Market will support the Dietary Guidelines for Americans and the mission of the USDA Center for Nutrition Policy and Promotion.

Next year, Boston Market will explore additional sodium reductions and other nutritional improvements to soups, sandwiches and salads.

Golden, CO  (Restaurant News Release)  Boston Market today announced 21 consecutive months of sales increases, compared to same-restaurant sales by month in the prior year. Company leadership attributes the sales success to a 2010/2011 refresh of the brand that featured the nationwide rollout of upgrades, new menu items and engaging the restaurant managers and staff, all designed to enhance the guest experience.

Improvements included the replacement of disposable plates and utensils with real plates and flatware, and upgraded serving stations, including a Chef’s Hot Case and enhanced carving stations. Delicious new entrées and side dishes were also added to the menu, and Boston Market employees underwent additional customer service training to deliver food to the table in the dining room. Changes to all 476 company-owned restaurants were completed in the fall of 2011.

“We made an important investment in hourly labor and facility and service upgrades, so it’s great to see a legitimate return on that investment,” said George Michel, The Big Chicken, aka CEO, Boston Market. “It further reinforces the strength of the Boston Market brand and validates our decision to implement these noteworthy updates in our restaurants after a quarter-century of operation.”

Restaurants in Baltimore, Detroit, Miami, New York City, Orlando, Philadelphia and Tampa all reported double-digit sales growth in 2011 compared to 2010. Comparable unit sales in 2011 were up 8.4 percent – versus 2010. Boston Market credits sales performance during the 2011 holiday season for helping to sustain momentum into 2012. Thanksgiving week sales at Boston Market were the highest they have been in company history. In November and December, sales were up 15 percent over 2010 numbers. Michel expects same store sales in the first half of 2012 to be up approximately 6 percent.

In addition to positive sales growth and performance, Boston Market attributes overall sustained success to a number of other key business achievements:

  • Average Unit Volume rose from $1.0 million to $1.1 million in 2011, projected to be at $1.17 million in 2012.
  • Renovated more than 50 restaurants, complete with new color schemes, awnings and furniture.
  • System wide free Wi-Fi for consumers has been completed in over half of its existing restaurants.
  • Contributed more than $500,000 to philanthropic partner, Give Kids the World.

This year, Boston Market will return to growth mode. The company is targeting three key markets for traditional restaurant expansion, and is focusing on non-traditional locations in airports, university campuses, freeway rest stops and food court mall locations.
