Houston, TX  (Restaurant News Release)  With Lent officially underway, Luby’s® has just unveiled its annual fish feature created for the special dietary needs of the season.  Available through Easter Sunday on April 8th, the landmark cafeteria chain will showcase the Baked Alaska Pollock – topped with creamy spinach and artichokes – at all of its restaurants, which are located throughout Texas, Oklahoma and Arkansas.  Wild and natural Alaska pollock, a sustainable North Pacific species of the cod family, will also be utilized in the Baked Almondine and Baked Whitefish dishes during this timeframe.

Diners sampling Alaska pollock menu items, as well as other seafood entrees, can also reel in their sense of adventure with an opportunity to win a five-night Alaskan summer getaway for two valued at nearly $2,500.  Customers can enter once a day during the promotional period with the receipt code verifying their lunch or dinner catch.  The winner and his/her guest will enjoy excursions to Anchorage, Seward and Denali Park, lodging and scenic railway transfers to and from all tour destination points.

According to Chef Marcos Leal, “In addition to its delicate texture and mild taste, Alaska pollock is great source of protein, and it’s a tasty complement to our made-from-scratch Texas cuisine.”
