Q&A With President of Dalmoros Fresh Italian David CarusoFollowing the major grand opening of Dalmoros Fresh Italian first train station location at South Station in Boston this month, Dalmoros rapid nationwide growth is kicking into full gear.  President David Caruso chats with RestaurantNews.com on the exciting expansion of the popular, fast-casual, fresh pasta and Italian cuisine restaurant, along with their recent rebrand.

For those who may not be familiar, what is the story behind you and your family opening and operating Dalmoros in the United States?

The concept of Dalmoros Fresh Italian was started after a family trip to Italy where my father, also named David Caruso and an Italian-American, was inspired by small, local pasta shops serving fresh pasta in a quick, casual setting.  This surprised him because fresh pasta like this was only found in the USA at traditional sit-down restaurants that required a napkin on your lap, multi-course meal and high price tag. 

What is Dalmoros Fresh Italian know for, and what sets you apart?

We make restaurant quality food with fresh ingredients in a fast paced environment for a third of the cost.  You no longer need to spend the time and money to sit down at a fine dining restaurant to get a fresh and authentic Italian meal.

Talk about the recent re-brand from DalMoros Fresh Pasta To Go to Dalmoros Fresh Italian – What is new?  Changing?  Staying the same?

At the heart of Dalmoros we’re still the same fast casual restaurant people know and love.  We still make fresh pasta daily, and with the rebrand, we’ve balanced our menu to incorporate more Italian favorites.  We now offer Italian sandwiches, with favorites like chicken parm and meatball, but some other sandwiches using popular Italian meats and cheeses with a Dalmoros twist!  You’ll also find some new lighter options like our new Chopped Italian salad.

What is the latest on Dalmoros expansion?  What can you tell us about the cities and noteworthy locations the brand will be opening in, in addition to the latest opening in Boston’s South Station?

Besides Boston’s South Station location, we have a fair amount of openings in the Northeast – We have NYC, Washington, DC and Philadelphia on the horizon.  We also look forward to moving West and have locations in San Antonio and Austin opening by the end of this summer.

What are Dalmoros plans for the future?

Besides additional train and transit stations, we are currently looking at opportunities in airports, college campuses and other major cities.

The South Station opening is a major milestone for Dalmoros team and reflects the growing demand for fresh, high-quality Italian food in convenient, high-traffic destinations.  Dalmoros is proud of this achievement and equally energized by what’s ahead.  Dalmoros has several very cool and unique expansion opportunities in the works nationwide, and South Station is just the latest of many more big announcements coming soon.
