In record fashion.

And all proceeds, $6600, through a record 66 beer bottles sold, benefited Make-A-Wish Illinois, which received the check directly from On The Border in early January.

At a pre-opening VIP Event in November, On The Border let its VIPs in on what has historically been a pre-opening ritual among team members: signing beer bottles that make up a beer-bottle chandelier, which is the eye magnet and signature centerpiece at On The Border restaurants.

“I’m thrilled that On The Border chose Make-A-Wish as their philanthropy,” said Schaumburg Business Association President Kaili Harding, who attended the VIP event with several of her colleagues. “I bought a bottle and I got to draw all over it and I’m really excited to see it here when I come back next time.”

According to Jamie Carawan, On The Border’s senior director of culinary and innovation, buying a bottle is just the right thing to do. “I’ve bought several bottles,” said Carawan. “When you do that, you become a permanent part of the restaurant. So it’s a really cool idea.”

Steve Clark, On The Border’s Chief Executive Officer, flew in for the event with other OTB executives in order to show their support of the Schaumburg community. When Clark met Kim and Kyle Coursey, a local Make-A-Wish family in attendance, he decided to buy them a bottle so they could be a permanent part of the restaurant.

“We were treated amazing by the On The Border staff,” said Kyle’s mom Kim. “They really did a lot for us and made us feel really comfortable.” Chimed in Kyle: “Great food too!”

Located at 870 N. Meacham Road in Schaumburg, the 6951 square foot restaurant, which employs 130, is a new prototype for the brand, featuring an open kitchen with a mesquite wood-burning grill, brighter colors, more rustic finishes, unique art & décor, and two ‘El Presidente’ booths, special sections perfect for celebrations and gatherings. The restaurant also offers a spacious cantina with more than 40 tequilas, 12 draft beers, and multiple flat screen TVs for sports viewing and an expanded outdoor patio with seating for 60 people.

“We’ve been a proud neighbor in the Chicago area for the past 16 years, and now Schaumburg is experiencing our new state-of-the-art prototype, with a laid back atmosphere and a natural look that leans into the Tex-Mex roots of this brand,” said Clark. “It’s an OTB with all of the things that our other Chicago locations have embraced, including mesquite-grilled steak fajitas made from premium outside skirt steak, ‘Guacamole Live’ made fresh-to-order at your table, homemade salsa and sauces and hand-pressed tortillas. And of course we brought a wide and a crave-able selection of margaritas to Schaumburg including OTB Meltdown Margaritas, where we top your margarita of choice with Midori, Chambord, Cointreau, Grand Marnier or your favorite tequila. We created a new look while still honoring the OTB heritage, flavors, great times and cocktails that this city loves.”

On The Border in Schaumburg is open from 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to 11 p.m. Friday and Saturday. Happy Hour is featured Monday through Thursday with special priced drinks available all day. Brunch is offered Saturdays and Sundays from 10 a.m. to 2 p.m.
